A refreshing summertime side dish, perfect for picnics and barbeques.
(buy Organic whenever possible)
2 mangoes peeled and chopped (cut around large pit)
2 bell peppers chopped (red, orange or yellow)
1/2 small red onion finely chopped
1 cup of fresh cilantro leaves chopped (no stems)
juice of 3 to 4 limes
1 jalapeno finely chopped (remove seeds) - or - crushed red pepper to taste (if using jalapeno, taste it before adding to determine level of heat-too much heat will ruin the dish)
sea salt and black pepper to taste
Mix all ingredients in medium bowl
Cover and place in refrigerator for later or eat on the spot
Great as a side dish or on its own
Eat with chips or enjoy over fish
